The ingredients for Skillet Breakfast are:

1 medium red potato w/skin diced
3 lge eggs
*2 oz of ham, diced or chopped (I like Hormel because it is low in fat)
*1 smoked sausage, chopped (I use Johnsonville 50% less fat-but any sausage will do)
1 tbs Fleischmann's w/olive oil
1 oz shredded cheese (I will use what I have on hand)
1 tsp olive oil

*Note* you can use any type of meat that you care to, I have used leftover baked chicken breast or steak, I've even used leftover pork tenderloin.....it's your choice

Makes 2 adult servings or 3 childrens servings

Here is how you make Skillet Breakfast:

Use olive oil to fry potatoes until cooked, remove and set asideIn same skillet, cook meat, remove and add to potatoesIn skillet add 1 tbs Fleischmann's and melt on low to medium heatIn small bowl mix eggs, add to skillet do not stir or scramble cook until bottom as formed like a pancake, add potatoe and meat mixture cover for 5 mins on low and continue to cook until egg is done, last, sprinkle shredded cheese over top and cover a few minutes until cheese has melted Now serveServing Size: 3Number of Servings: 3Recipe submitted by SparkPeople user TONYA46.
