1 (15 oz) can butter beans..reserve 2 Tbs liquid, rinse beans
1 scallion, white & light green cut into 1/2 pieces
1/4 cup fresh mint leaves
1/4 tsp. ground coriander
Salt
Pinch cayenne pepper
1/4 cup Greek yogurt
Extre Virgin Oil for serving

1, Combine garlic, lemon zest, & lemon juice in small bowl; set aside for 15 minutes. Set aside 2 tablespoons peas for garnish.2. Pulse beans, reserved bean liquid, remaining peas, scallion white & light green, mint, coriander, 3/4 tsp salt, cayenne, and lemon juice mixture in food rocessor until fully ground, 5 to 10 pulses. Scrape down bowl with rubber spatala. Continue to process until uniform paste forms, about 1 minute, scraping down bowl twice. Add yogurt and continue to process until smooth and homogenous, about 15 seconds, scraping bowl as needed. Transfer to serving bowl, cover and let stand at room temperature for at least 30 minutes. (Dip can be refreigerated for up to 1 day. Let refrigerated dip stand at room temperature for 30 minutes before serving.)3. Season to taste with salt. Sprinkle with reserved peas and scallion greens.
