Slice the onion thinly and saute in olive oil until it turns golden and begins to caramelise at the edges. Meanwhile slice the cabbage into slivers, taking care to cut thicker stalks finely. Add cabbage and garlic to the golden onion, season lightly and saute on a low-medium head until the cabbage wilts, stirring regularly. Add the chilli flakes and continue to cook, adding spashes of hot water from time to time to stop the cabbage from drying out. Adjust seasoning.
