1 - 8 oz. cup reduced fat sour cream
1 small jar pimento (optional)
1 can (10 3/4 oz) condensed Cream of Mushroom Soup
1/4 of small green pepper, chopped (mostly for color)

1. Cook sliced squash in 2 tablespoons of water, drain well.2. Add sugar, salt, pepper, onion, carrots, sour cream, pimento, soup and green pepper. Mix well.3. In large skillet, melt butter and stir in package of stuffing mix.4. Place half of dressing mix across bottom of 9" x 13" casserole dish or pan. Spoon squash mixture on top of dressing. Top with remaining stuffing. Press together lightly.5.
