2 tbsp brummel and brown yogurt spread (butter alternative)
2 tbsp unbleached all-purpose flour
1 1/2 cups nonfat milk
1 cup shredded sharp cheddar
1/2 lb Gia Russa 100% Whole Wheat Shells
Salt & pepper to taste

Here is how you make Sneaky Mac N Cheese:

Start by preheating your oven to 375 degrees.Take your acorn squash, rinse the outside and split down the middle. Scoop out the seeds and places both halves cut side down on a cookie sheet with parchment paper.place in oven and bake for 15-20 min or until tender. Allow to cool and then scoop out the yellow flesh.While your squash is baking, fill a pot with water and bring to a boil. Once your water is boiling, be sure to season the water with salt. Drop pasta shells in water and boil for 10-15 min. or to desired tenderness. Once your pasta is finished, drain and rinse with cool water and put back into the pot you cooked it in.In a small sauce pan over medium low heat, melt brummel and brown sprinkle flour into the pan. whisk together until mixed well, next add the milk slowly while continuing to whisk mixture. Be sure to mix well so there are no lumps. bring the sauce to a low simmer and add the chedder. whisk in a figure 8 motion until cheese is completely melted. Next add your acorn squash that you scooped out earlier. Whisk together well, it should be undetectable in the sauce. Season with salt and pepper to taste.Once your sauce is thickened and seasoned to your liking, dump over your cooked pasta and stir together gently.
