cook chicken breasts in just enough water to cover in a stock pot (about 8 to 10 cups) with parsley, poultry seasoning mix, 2 bay leaves, garlic, onion, sea salt and fresh ground black pepper. (add spices to taste) let simmer for at least an hour. Ladle 6 cups of the stock into a small sauce pot. Put 3 TBSP of the stock in a cup and let cool a bit. Add 3 TBSP cornstarch to the cooled stock and stir until liquid. (add more stock if necessary) pour this into stock in the sauce pot; stirring constantly. This will prevent lumps! Now place the gravy mix over medium to med - low heat. Stir frequently till it comes to a low boil. Stir constantly for a min longer. Remove from heat and serve over chicken.
