A chili paste I came up with to spice up dishes. It is based off of the Thai condiment Nam Prig Pow, which I love. This paste is mild with a warm heat, my family isn't as much of a hot head as I am. If you like though substitute half of the Anaheim chiles for dried indian chilies for more kick and flavor.

1 cup chopped onion
4 ounces Anaheim chiles
1/4 cup brown sugar

How Do I Make Chile Paste?

Here is how you make Chile Paste:

Heat oil in a small pot. Add garlic, onion and chilies, fry until garlic begins to turn golden brown. Pour the oil mixuture into a food processor and blend until smooth (be careful the oil is HOT). Add remaining ingredients and blend to mix.
