1 Head Cauliflower
4 Cups Chicken Stock (homemade)
4 Ears of Corn

2 Carrots, Chopped
3 Celery Ribs, Chopped
2 Tbls Butter/Olive Oil
3 Strips crispy bacon, crumbled (Optional, for garnish)


How Do I Make Corn Chowder?

Here is how you make Corn Chowder:

Cut cauliflower into medium florets, simmer 20+ minutes in chicken stock until very tender. Allow to cool slightly. Puree cauliflower in blender until very smooth. Reserve chicken stock. Cut corn off cobs. Place cobs and ? of the cut corn in chicken stock and simmer for 15 minutes. Remove cobs and discard. Place corn and chicken stock mixture in blender and puree. Sautee onion, celery, and carrots in the butter until the onions are translucent. Add cauliflower and corn stock purees to the mirepoix and simmer until carrots are tender.
