1/2 Cup finely chopped English Cucumber
1/3 Cup lime Juice
1/4 C thinly sliced green onions
1 T. grated orange zest
3 T. orange juice
2 T. chopped fresh mint, or 1 T. dry mint
1 t. cumin seeds
1 or 2 fresh jalapeno peppers seeded and finely chopped
salt to taste

Here is how you make Corn Relish:

Add cleaned corn to boiling water and cook for 5min. Drain and cool. Remove corn from cob. Mix all ingredients, season with salt. Cover and refrigerate up to one day.
