Here is how you make egg drop dumplings:

Beat eggs, milk, salt (if desired), pepper, baking powder with a wisk in a medium bowl. Add potato flour and continue wisking. Then add white flour a 1/4 cup at a time and continue mixing and watching the batter. The batter is right when it feels and looks like thick gruel but still shiny wet. Meanwhile heat 8-10 cups of water in a medium large pot to boiling. I add low sodium chicken boullion granules to the water for flavor. When water is at a good rolling boil begin by dipping an ice tea spoon or a teaspoon into the water to get it hot. Then take spoonfuls about the size of a quarter on the spoon and dipping them one at a time into the water until done with batter. The dumplings initially sink to the bottom and then rise up to the top when they are cooked. I watch carefully because if they get to high the water spills over if your pot is to small. I estimate you get about 4 cups or so of dumplings. Once you have got all in the water turn the flame to low and let simmer for approximately 10-15 minutes.
