Melt butter in small heated skillet. Saute zucchini, onion and pepper for 2 - 3 minutes. Add spinach and warm through. Beat egg and egg white together, pour over veggies. Cook for a moment. Lift corners with spatula and tilt pan to bring uncooked egg from top. When just about dry on top, flip omelet over (it's all in the wrist), sprinkle shredded cheese over top, heat for a moment, then slide out onto a plate, folding top over to make a half circle.
