Here is how you make Seeded Flax Flatbreads:

Combine all ingredients in a bowl and stir with a heavy spoon until a dough forms. Knead the dough with your hands until the dough is smooth and elastic, adding extra water if the dough is too dry. Divide the dough into 4 balls (or desired number of servings) and leave in the bowl to rest for about a half hour. While the dough is resting, heat a pancake griddle or frying pan. When the pan is smoking hot, roll out the balls of dough as evenly and thinly as you can. Cook each rolled out dough circle on the first side until you can see bubbles starting to form (about a minute), turning to the other side and allowing to cook for another 30-60 second. Place a clean, folded cloth on a plate to the side, and as each flatbread is finished, put it inside the cloth to stay soft and warm.
