1 Small onion
1 garlic clove, minced
4 tsp virgin olive oil
2 med. tomatoes peeled and chopped
1 tbsp lemon juice
1tsp dried basil
1/4 tsp sea salt
1/8 tsp cinnamon
1/8 tsp pepper
1 med eggplant (cut into 1/4" slices)
6 slices of low-fat swiss cheese


How Do I Make Moussaka?

Here is how you make Moussaka:

In skillet, saute onion and garlic in 1 tsp oil until tender. Stir in the tomatoes, lemon juice, basil, salt, cinnamon and pepper. Bring to boil. Reduce heat; simmer, uncovered, for 15 minutes. Meanwhile, brush eggplant slices with remaining oil broil 4" from the heat for 1-3minutes on each side until lightly brown. Spread 1/2 cup of sauce mixture in 8X11 pan greased with olive oil top with layer of eggplant slices focus on covering each slice of eggplant with about 1tsb per slice. Repeat layers.Cover and bake @ 350 for 25 minutes uncover and add cheese. Bake for 5-10 min until cheese is bubbly.
