Mix all ingredients in a glass jar. Add more vinegar and wine as necessary to make a spreadable mustard paste. Let all ingredients sit overnight (do not taste yet - it will be too bitter). Overnight the ingredients will become a delicious, VERY spicy mustard. If the final product is too spicy microwave for one minute, stir and let cool. Repeat as necessary to reach desired spiciness. Try any variation of liquids - Water, Lemon Juice, Beer, Dry White Wine and so forth.
