1/2 C Craisins (dried cranberries)
1 1/2 C almond milk
1/2 C + 1 T canned pumpkin
2 eggs
1 tsp vanilla extract
1 medium apple, peeled and chopped
1/3 C chopped pecans (or other nuts), divided

Here is how you make Pumpkin Cranberry Apple Baked Oatmeal:

Spray an 8x8 baking dish with cooking spray. Mix brown sugar, egg whites, pumpkin, almond milk and vanilla. Add oats, wheat germ, cinnamon, salt and baking powder; mix well. Fold in Craisins, apples and half of nuts. Pour into prepared baking dish and top with the rest of the pecans. Bake at 375 for 20 minutes. Let cool for 10 minutes before cutting. It will be soft-set, not firm like oatmeal bars. Cut into 6 pieces.
