Here is how you make Oatmeal Polenta:

Use steel cut oats, this is not for rolled oats.Cook oats per pkg, using a bit less water and half the recommended salt. You can use regular or quick cook steel cut oats.Remove from stove, stir in olive oil and cheese. Pout out into non-stock pan, 8"x8", or 9'x13", depending on how thick you want final results. Smooth and cover with plastic wrap, and weight down with another pan if you wish. Cool, then regrigerate.
