Heat the olive oil in sauce pot over medium heat. Add the orzo and toast until deep golden brown. Stir in the rice and broth and bring to a boil. Reduce heat to low, cover pot and simmer for 17-18 minutes.In a small bowl combine tomatoes, onions, cilantro, lime zest and juice.
