Here is how you make Basic Polenta:

Boil 2 cups of water, then whisk in 1/2 cup dry polenta. Whisk until thickened, about 1-2 minutes for instant polenta. Whisk until creamy (mashed potato consistency), remove from heat, and add olive or canola oil. I almost always add seasonings when cooking polenta. Add the seasonings to the water or stock before boiling. Here are some of my combinations: - rosemary (about 1 tsp dry, or 2 tsp fresh, chopped), and olive oil (add oil at end)- 1/8 tsp garlic powder, 1/8 tsp red pepper flakes, and canola oil (for Mexican-style polenta) - 1 tsp dry oregano, 1 tsp dry basil, 1/8 tsp garlic powder, and olive oil (topped with tomato sauce & cheese for an italian-style side dish) Serving Size: Serves 4Number of Servings: 4Recipe submitted by SparkPeople user KLWOZNIAK.
