Here is how you make Jim's Low Cal Grilled Sweet Potato and Vegetables:

Chop all the veggies..I slice the bell pepper into thin (1/4 wide) stripsI cut the onion in to chunks and then break into pieces.Slice the potato into thin chips.Free to add in other veggies in your fridge.You get the picture.....fire up the grill and get it good and hot and then drop the heat down to med. I then spray a round grilling pan with Pam Olive spray, (be generous). I put ground pepper and dry seasonings and shake over the pan before adding vegetables. Throw the veggies, and spray some more Pam on the vegetables, throw in the remaining dry spices. (no rhyme or reason), and grill till sweet potato is tender.Lastly, don't forget the glass of red wine to help the cook!! Enjoy.
