1 Tbsp butter
1 Tbsp AP flour
1 1/2 cup skim milk
1/2 tsp ground nutmeg (freshly ground is best if you can)

2 Tbsp Fat Free Cream Cheese
2 tsp. fresh thyme, slightly chopped (or a scant tsp dried thyme)
sea salt to taste

4 medium raw sweet potatoes, halved and thinly sliced
1 medium tart apple, peeled, quartered, cored and thinly sliced

How Do I Make Scalloped Sweet Potato?

Here is how you make Scalloped Sweet Potato:

Preheat oven to 350 F and grease a baking pan (about 9"x13")1. Cook sliced onion in olive oil on low heat slowly until soft and then continue until the onion caramelizes and becomes golden and sweet taking care not to brown or burn. Add water if the onions in the pan start to dry out too much. Once the onions are sweet and caramelized season with a little salt and set aside.2. Melt the butter in a medium sized sauce pan over medium heat and then whisk in the flour, cooking it until it until it starts to change color (a light roux) then slowly whisk in the milk and the nutmeg.3. Bring the milk mixture to a boil, reduce heat and simmer a few minutes until it thickens somewhat. Remove from heat and whisk in the black pepper and the cream cheese and thyme. Season with salt and set aside4. Toss the sweet potatoes, apple and the caramelized onion together with a little salt and then place in prepared pan.5. Pour the milk mixture over the sweet potato mixture, cover the pan with foil and bake until the sweet potatoes are tender.
