Peel and dice the potatoes. Dice the onion and pepper. Preheat a large frying pan to medium. Add the oil. *If using the bacon just use the bacon grease already in the pan instead of the oil! Add the veggies and sprinkle with the salt, pepper, and garlic powder. Cover and fry on medium heat, turning occasionally until all are tender and lightly golden brown.
