Black Beans (canned, rinsed and drained) 1 can
1/2 Jalapeno (raw,chopped,seeded) about 2 T
1/2 med red onion (raw,chopped) about 1/4 C
1/2 green bell pepper (raw,seeded/chopped) about 1/2 C
1 Corn Cob (sweet,raw,shucked) about 2/3 C or 90 grams
1/2 lime (fresh,squeezed) about 1 T

Season with Cumin, corriander, Salt, Pepper -
Add fresh Cilantro if you have on hand too!

C- cup
T - tablespoon

Should come out to about 4 Cups, so 1 serve is 1 Cup which is plenty! Add a baked corn tortilla (approx. 56 cal) you have a decent healthy lunch.
