I had cooked some brown rice and thought it would be good with some fresh salsa that I bought. As I was thinking about making breakfast, I realized that I really needed the protein and was thinking what is the lowest calorie way to get that and my go to protein was it. Egg whites. So I scambled the egg whites and cooked in the microwave for about 2 minutes in a bowl sprayed with canola non stick spray. I broke this up and mixed into the brown rice and put the salsa on top.
