Peel and chop onion. Heat oil in a heavy-bottomed saucepan with a tight-fitting lid. Add the onion and cook over medium to medium-high heat, stirring frequently, until browned on the edges (about 10 minutes).Meanwhile, pick over and rinse the lentils. Add lentils, water, and seasonings to the onions, stir well. Cover, bring to a boil, then lower heat and simmer 15 minutes.Wash rice and let soak while lentils are cooking.
