Here is how you make Spinach Frittata:

In a large bowl combine eggs, milk (salt & pepper if you want) onions and peppers and cheese and blend well. In a heavy skillet (cast iron is best) saute garlic in olive oil until aromatic . Drop in the spinach and cook until wilted, remove from stove and pour your egg mixture evenly. Place in a 400 degree (preheated oven) and cook for about 35-40 minutes.
