Butter, unsalted, 1 tbsp
Potato Starch, 1 tbsp
Sherry, dry, 2 tbps
Fresh Lemon Juice, 1 tbsp
Mustard seed, crushed 1/2 tsp
Better than Boullion Chicken Base, 1 tsp
Nutmeg, ground, 1/4 tsp
Pepper, white, 1 tsp
Grated Parmesan Cheese, 2 tbsp


How Do I Make Creamed Spinach (Gluten Free)?

Here is how you make Creamed Spinach (Gluten Free):

1) Thoroughly wash and spin dry spinach2) Heat olive oil in large saucepan -- and add spinach. Heat on low heat until it starts to wilt, and then stir until completely wilted. Strain over a bowl (reserving olive oil and liquids). Allow to cool, then coarsely chop.3) In same pan, melt butter and potato starch over low heat, and allow to cook for about 1 minute.4) Add milk, cream, sherry, drained liquid from spinach and bouillon and whisk together, and bring to a boil over medium heat. Let boil a bit over very low heat (stirring every few minutes with the whisk) for about 5 minutes. (Everything can be prepared to this point, and allowed to sit for up to 20 minutes, if necessary.)5) Add seasonings and lemon juice, and whisk together. Taste and correct seasonings as desired. (Sometimes I add a dash of cayenne as well.)6) Add in spinach and stir to combine thoroughly.
