Here is how you make Spinach Tamagoyaki:

1. Blanch spinach in boiling water 30 seconds. Remove from water and place in a bowl of ice water until cool (about 2 to 3 minutes). Remove spinach from ice water and remove excess water by squeezing between a paper towel. Place on a plate, shape into a long cylinder, add 1 tsp of soy sauce and squeeze to remove excess sauce. Set aside.2. Beat together egg whites, sugar, and.5 tsp of soy sauce in a bowl. 3. Heat a 10-12" nonstick frying pan, wok or tamago pan on medium high heat.
