Cut acorn squash in half, remove seeds and connecting fibers, peel "shell" off the meat. (To facilitate ease in peeling the acorn squash, I boil the whole acorn in water until you can pierce the shell with a fork - usually about 20 minutes.)After peeling the acorn squash, cut it into cubes. Place in skillet, add butter and a little water - about 1/3 c., cover and let cook until desired consistancy.
