I wasn't sure how to cook a spaghetti squash but found online to just pierce it in several places, cook for 5 min. in the microwave, turn over to other side, cook another 5 min. and let set 5 min.. Then cut in half and leave to cool if needed. Once cool, use fork to scrap out squash strings. Pick out the seeds. Add a pinch of sea salt and ground pepper to taste (not included in recipe dietary indicator). Chop grape tomatoes and add corn. Sprinkle cheese on top. Makes two servings. Microwave to heat.
