3 Med. Green Bell Peppers
3 Med. Red Bell Peppers
2 cups, chopped or coarse ground sweet onion
2 Tbsp Kosher Salt

Syrup
4 cups Cider Vinegar
4 cups Granulated Sugar
2 tsp finely minced Garlic
2 Tbsp Mustard seed
2 Tbsp Celery seed
1/2 tsp Turmeric, ground
1/4 tsp red pepper flakes, or to taste (optional)

Here is how you make Sweet Summer Squash relish:

PrepIn a large glass or plastic bowl, mix together the squash, onion & peppers; toss to mix well. Add salt, stir, cover and refrigerate; let stand 6 hours to over night, stirring occasionally. Drain well but DO NOT RINSE.In a large pot, mix together the syrup ingredients EXCEPT the red pepper flakes, if using. Bring to a boil, stirring frequently until sugar is dissolved. Add the drained vegetables and red pepper flakes and return to a boil. Reduce to medium and simmer for an hour. Using a spoon and funnel transfer to sterilized jars, top off with remaining syrup (if any). Seal and refrigerate or process for canning.Serving Size:?Makes approximately 8 pints
