2 cups Asparagus - cut into 2 or 3" pieces
4 large tomatoes - diced
splash of worchestershire to taste
splash of lemon/lime juice
2 cloves garlic (or to your taste)
1/4 cup Light Feta - crumbled
1Tbsp Cornstarch
Salt & pepper to taste if desired

feel free to add additional veggies! I like to add bell peppers and mushrooms, you can use any odds & ends you have in the fridge! Also you can add some chili peppers or franks red hot if you like it spicey! Very versatile dish!

Here is how you make Tomato and Asparagus Stirfry:

In a large non-stick frying pan add diced tomatoes and asparagus pieces at medium heat (if using other veg also add those), satay until tomatoes start to break down and become quite liquidy (3-5mins)Add all your sauces/spices and cover pan with a lid so the steam will cook the asparagus until tender but still a bit crisp (about 5 mins).Uncover the pan and spinkle in cornstarch to thicken tomato juices, add more cornstarch if needed to reach the desired consitancy (remember it will also thicken a bit once its removed from the heat and starts to cool). Add feta just before removing from heat so that it melts a bit into the sauce.Serve and enjoy!!
