2.5 cups water
1 tsp salt

1tbsp canola oil
1 small onion, diced
3 cloves minced garlic
6 large mushrooms, diced
1/2 large orange pepper, diced
1 14oz can of stewed tomatoes
1/5 cup low sodium soy sauce
4 tbsp fresh basil (or 2 tbsp dried basil)
1 tsp dried dill
Salt to taste

Here is how you make Barley Tomato Pilaf:

Put pearl barley and water in a heavy bottom pot with 1 teaspoon of salt, bring to a boil and reduce heat. Let simmer while you saute onions, garlic and mushrooms.
