Coat wok (or pan) generously with cooking spray on med-low heat and add zucchini and squash. Cover, stirring often for 5-10 min. Add garlic, onions, salt and pepper. Cover stirring often for about 5 minutes. Add mushrooms and tomatoes. Cook until the firmness of vegetables is to your liking (I like my squash and zucchini firm).
