2 c. shredded sweet potato (1 large sweet potato)
2 c. shredded red potato (about 4 smallish potatoes)
2 c. shredded zucchini (1 large zucchini)
4 egg whites
1/4 c. whole wheat flour
1 T Mrs. Dash Garlic & Herb salt-free seasoning

Here is how you make Veggie "pancake":

Mix ingredients together in a large bowl. Heat a small amount of olive oil or canola oil in a skillet. (I used olive oil spray.) Separate batter into fourths. Shape 1/4 of batter into a patty and place in skillet. Brown on one side, then flip and brown on other side.Can make 4 1-patty servings, or 8 pattys (2 patties = 1 serving). The patties come out pretty big, so I divided the batter up into eights and made 8 smaller patties. Two of these with an apple chicken sausage makes a delicious, filling breakfast! (or lunch!)The recipe suggested salt, cayenne, and nutmeg as the seasonings. I used Mrs. Dash because it's what I had on hand, and because I love garlic.
