Here is how you make Cafe Rio pork:

Cook all ingredients (except for the later ingredients) in crock pot all day (I cook mine on low for about 8 hours). One hour before serving, remove pork roast and shred it. Dump out the juices from the slow cooker. Put pork back into crock pot and add the last 2 (later) ingredients (brown sugar and red enchilada sauce).
