1 1/2 C. baby carrots
1 C. frozen pearl onions
8 oz. sliced fresh mushrooms
2 large stalks celery, sliced
3 cloves garlic, pressed
1 tsp. dried thyme
1/2 tsp. salt
1/2 tsp. black pepper
1 1/2 lbs. lean pork, diced into 1/2" - 1" cubes
2 Tblsp. cornstarch
2 Tblsp. water

Here is how you make No Potato, Slow Cooker Pork and Vegetable Stew:

Put all ingredients, except the pork, cornstarch and water, into a slow cooker. Stir to combine and turn on high. Preheat a large skillet coated with nonstick cooking spray over medium heat. Cook the pork until browned on all sides, but not cooked through. Add to the ingredients already in the slow cooker and stir to combine. Cook for 5 to 6 hours on high. Combine the cornstarch and water in a small bowl and add to the slow cooker.
