1 oz Verjuice
1 fl. oz Sherry, dry

Here is how you make Artichoke Dip:

Drain the artichoke hearts, reserving the liquid. Place verjuice & sherry in a half-cup measure & top up with the reserved artichoke liquid.Heat oil in a small saucepan & add onions, saute for a few minutes. Add the juice/sherry mix. Reduce heat to low & cook, covered, about 20minutes. Add the artichokes & cook for another 5-10 minutes.Allow to cool, then place in a blender with the creme fraiche and salt & pepper, Blend till smooth.
