Preheat oven to 350.In a large bowl mash bananas until they are pulpy. Add egg and applesauce and whisk lightly. Add sugar and vanilla and mix well.In another bowl combine dry ingredients and mix well.Add wet to dry and mix until combined. Stir in fruit and nuts.Scoop into regular-sized muffin tins using a 1/4 dry measure cup. For mini muffin tins use rounded tablespoonfuls.Bake at 350 for 20 minutes - use a timer!
