Flax seed1 - tbsp. baking powder1/2 tsp. baking soda1/8 tsp.salt1 - cup mashed overipe bananas1/4 cup sugar1 large egg1/2 tsp. vanilla extract1/4 cup unsweetened applesauce1/4 cup craisins1/4 cup chopped walnutsPrepare muffin tins ... preheat oven to 350 deg.Combine flour, flax seed, baking powder, baking soda, salt, craisins & walnuts. Shift together.In separate bowl, combine banana, sugar, egg & vanilla extract. Blend well and add applesauce.Combine dry mixture with the banana mixture ... blend just enough to combine (don't over do it!)Put the batter into muffin cups and bake for 13 to 15 minutes. Check the centers with a toothpick.. Makes 12 servings.
