I love these. They are easy to make, VERY healthy, low in calories and the recipe is versatile. Since a good friend shared this recipe with me, I always have a batch of Chia Pats in my fridge.Here are some variations:Mix in some raisins right before you scoop the batter onto the baking sheet.Make them a little more "gingersnappy" by adding 1/2 tsp more cinnamon, 1 tsp ginger and 1/2 tsp ground cloves. (add 2 tbsp water if you do this)Instead of cinnamon, add 2 Tbsp baking cocoa powder (add 2 tbsp water if you do this).Make "Whoopie Pies" by mixing some whipped cream cheese, vanilla and stevia. Use about 1 tbsp as filling between two Chia Pats.

Here is how you make Chia Pats:

Preheat oven to 325. Spray a baking sheet with Pam.Beat egg in a medium sized mixing bowl. Add salt, Stevia and cinnamon and mix them in well.Add baking powder and mix well. Ingredients will start getting poofy because of the baking powder. Once this is all well mixed, add chia seeds and water, mix well.Let the mixture set just until firm enough to spoon onto baking sheet in 12 equal sized pats (don't let it get too firm). Press and shape with the back of a spoon so they are about 3 inches across.Bake for 15 minutes.Store Chia Pats in the refrigerator.
