Preheat oven to 350 degrees. Spray loaf pan with non stick spray. In large bowl, whisk eggs. Add oil, sugars, and vanilla. Mix well. Add zucchini. Mix well. Add flour, cocoa, baking soda, baking powder. Blend well until incorporated. Stir in mint pieces. Spoon mix into prepared loaf pan. Bake 64 minutes or until toothpick comes out clean.
