3/4 Cup of Bob's Red Mill Organic Soy Flour
1/2 Cup of Bob's Red Mill Almond Meal/Flour
2 Large Eggs
2 Sticks of Butter or Marg.
1 Tbs of Vanilla
1 tsp of Salt
1 tsp of Baking Soda
1 Package of Chocolate Chips or Chocolate Covered Rasins
1/4 - 1/2 Cup of Sugar
1 Cup of Packed Brown Sugar

Here is how you make Lower Carb Chocolate Chip/Raisin Cookies:

Not Everyone can find the Bob's Red Mill Products. If you go to his website at www.bobsredmill.com you will find all sorts of very healthy and organic foods/flours/spices.Now for the instruction!!!!!Take the Butter, sugar and brown sugar and mix with mixer until smooth. I found that soft butter mixes way better than hard butter!!! Now add 1 egg at a time. After the eggs are in and mixed, Mix in the vanilla then let mixture set. Now measure out the Remaining ingredients into a smaller bowl and mix well. Then turn the mix on a low setting and put a cups worth of dry mix into the wet. This will take time, because if you just pour it all in, then you can potentially burn up your mixer.Now that everything is mixed together, you can add the chocolate covered rasins. Mix nicely and then just put a ball of mixture on a cookie sheet and cook at 325 for like 8-10 minutes. I was able to get 4 Dozen cookies. They were about the Size of 2 Quarters Side by Side. So, if you have 2 cookies, then you are looking at about 10 Carbs per Cookie. Lower than your standard Chocolate Chip Cookie!!!NOW VERY IMPORTANT!!!These are not your typical cookies. They are high in fiber. If you eat too many at one time you can get a stomache ache or even the Squirts.
