Here is how you make Lori?s Chocolatie Chocolate Chip Bran Muffins:

1. Pre-heat oven to 400 F.2. In a medium mixing bowl, pour the boiling water over 1 Cup of bran and set aside.3. In a large mixing bowl, add the brown sugar, Splenda, and olive oil and beat with a hand mixer about 1 minute.4. Add the eggs and beat for approximately 30 seconds.5. Add the milk and vanilla and mix for another 30 seconds.6. In a small mixing bowl, combine the remaining dry ingredients EXCEPT the reserved bran, chia and chocolate chips.7. Add the mixed dry ingredients to the sugar mixture and stir together for about 30 seconds with your hand mixer.8. Add the moistened bran, stir together.9. Stir in the chocolate chips and reserved bran.10.Spoon the batter into a lined muffin tin (about 1/4 Cup for each muffin).11. Sprinkle the remaining chia seeds on top of each muffin (approximately 1/2 tsp each).12.
