3/4 cup of pumpkin puree (unsweetened)
3/4 cup rolled oats
1 and 1/2 scoops of chocolate protein powder (your choice..I used one that was 120 calories per serving and 24g of protein per serving)
1 and 1/2 teaspoon vanilla extract
2 teaspoons cinnamon
1 teaspoon nutmeg
1 tablespoon of agave nectar (or 12 packets of Splenda or stevia powder)
30-40 mini semi-sweet chocolate chips
Cooking spray

Here is how you make Pumpkin Chocolate Chip Protein Muffins:

Preheat your oven to 350 degrees. Combine all ingredients EXCEPT for the chocolate chips and cooking spray in a blender and blend well (If your blender is old and/or difficult, it helps to add all wet ingredients first, blend, then add dry ingredients and blend). Spray muffin tin with cooking spray liberally. Fill each cup 3/4 full. For each muffin, put FOUR chocolate chips into batter, so that they go into the middle of the muffin. Then pour a little more batter onto each muffin to cover the chocolate chips well. Place into oven, on the middle rack. Bake for 20 to 22 minutes. Enjoy!
