I'm working on this recipe to make it lower fat and pack in more fiber... so I'll probably change it around a lot more. Enjoy it if you want, I really like it. I got it from Sparkrecipes under "Low Fat Dark Chocolate Muffins" or something like that, but I didn't much care for the applesauce & egg whites, so I substituted full fat in there, and will start carving down the fat & calories a different way.

Here is how you make Semi-Sweet Chocolate Muffins:

Mix oats, milk, and half 'n half in a bowl and set aside for 15-30 minutes. I chop the oats up first in the blender, but it's not required.Mix together the oat mix with the eggs and oil.Mix remaining dry ingredients. Combine wet ingredients until the whole mix is wet but don't overmix. Fold in chocolate chips. Divvy up into the muffin pan, this recipe makes 12 regular size muffins.Cook for 20-25 minutes until done and the center springs back when you touch it (Careful not to burn yourself!). Take out of muffin pan and put on rack to cool.
