I was looking for something to do with some left over squash one day and found these muffins on a recipe site online. I made some modifications and they came out moist and yummy! Take the chocolate out and add some nuts, or berries and it would probably still be great. I'm sure this recipe would work for any kind of squash or pumpkin.
