Here is how you make D's Workout Cookies with protein powder:

Preheat oven to 375 degrees F.In a food processor grind Fiber One Cereal to crumb-like consistency. (I do a big batch and keep handy for recipes)In a large bowl add oats, flax, flour, sweeteners, baking powder, cinnamon and protein powder. Set aside.In a smaller bowl, combine all wet ingredients (applesauce, pumpkin puree, egg substitute) stirring until mixed well. Add wet mixture to large bowl of dry ingredients. Stir until completely blended.Add Chopped raising, craisins, coconut, walnuts and lemon zest. Stir into batter until evenly distributed.Spray a large baking sheet with nonstick spray. Using an ice cream scooper, scoop batter into 6 big mounds spaced evenly on the sheet. Using the botton of the scooper, lightly pat the tops of the mounds to flatten slightly.Bake on middle rack of the oven for 10-12 minutes or until the tops of cookies are just slightly firm. Allow to cool on the sheet.
