Add Pecans and Almonds; pulse 3-5 times to coarsely chop. Add Oats, Dates and Apricots; pulse 10 - 15 times till mixtures is well chopped but coarse.In large bowl, whisk together Egg, Maple syrup and Vanilla, add fruit mixture and use hands to mix well, separate any clumps of fruit.Spread mixture evenly in square pan and bake for 25 - 30 minutes just will set and golden brown. Don't overbake or bars will be too dry.Let cool on rake for 5 minutes, then cut into 25 squares.
