1 large apple, peeled, cored and cut into small chunks
1/3 cup sunflower seeds
1/3 cup pumpkin seeds
1/4 cup crystalized ginger, cut into small pieces. Used QFC Organic Truth brand with no nitrates, and used sharp knife to cut)
1/2 cup apple sauce (no sugar)
1/2 cup pumpkin puree
3 large eggs
2 tsp vanilla extract

1. Preheat oven to 350F. Lightly grease a 9x13 baking pan2. In a large bowl, mix together the flour, sugar, baking soda, cinnamon, ginger and flax meal.3. Stir in carrots, apple, sunflower and pumpkin seeds and crystalized ginger so it they are well coated.4. In a small bowl mix apple sauce, pumpkin, eggs and vanilla until smooth.5. Add egg mixture to flour mixture, and stir until evenly moistened.6. Put in the 9x13 pan, smooth flat as it will be thick7. Bake for 20-25 minutes, or until toothpick in center comes out clean.8.
