Preheat oven to 350. Mix all dry ingredients together in a large bowl. In a small bowl, mix the honey, oil, vanilla and apple juice. Add in applesauce. Add the wet mixture into the flour mixture and blend until combined. Stir in apples. Grease muffin pan. Divide batter evenly to fill 12 muffin cups. Bake for 23 to 28 minutes.
